Fluffy Vegan Pancakes – YUM!

Fluffy vegan pancakes with chocolate chips in them – DOUBLE YUM! Featuring one of our favourite Vivo Life products – PERFORM - this nourishingly tasty recipe doesn’t have to be saved for the weekend or a special occasion; packed with plant-based protein and all-vegan ingredients, treat yourself to this wholesome, delicious, stack of snacks any time.

What is PERFORM?

PERFORM is raw plant protein & BCAA. Not only is it good for you, it tastes incredible and delivers epic results – exactly what you want from a supplement. It’s got added turmeric extract to optimise recovery and fermented protein for optimal digestion. For best results take 1 scoop of PERFORM 90 minutes before and/or within 30 minutes after your workout to maximise your performance and recovery. Mix it with 250ml liquid and any other ingredients of your choice.

Ingredients (makes 2 servings)

1/2 cup rice flour
1/2 cup tapioca flour
1/2 scoop Vivo Life Salted Maca Caramel PERFORM
1 tsp baking powder
1 tsp Vivo Life organic maca powder
1/2 cup plain soy or coconut yoghurt
1/4 cup dark chocolate chips
Splash of vanilla extract
3/4 cup of almond milk

Method

Sift the flours, Vivo PERFORM, baking powder and maca into a small bowl.
In a separate bowl mix the yoghurt, almond milk and vanilla until smooth. Add the wet ingredients to the dry and whisk thoroughly. If the mixture looks too thick splash in a little more almond milk. Stir in the chocolate chips and allow the batter to sit for about five minutes. Grease a non-stick pan with a small amount of coconut oil and add about ¼ cup of batter at a time. Cook for around three minutes before flipping it; then further one to two minutes on the other side. Keep going until all the batter is gone. Serve warm with all of your favourite vegan toppings!
